- Cook and chill the rice in advance (preferably overnight).
- Peel and devein the shrimp. Chop garlic, chilies, onion, and bell pepper.
- Heat 1 tablespoon of oil in a wok or large pan over medium-high heat.
- Add shrimp and cook for about 2 minutes per side until pink and opaque. Remove and set aside.
- In the same pan, add another tablespoon of oil.
- Stir-fry garlic and chilies for about 30 seconds until fragrant.
- Add onions and bell pepper, cooking until slightly softened.
- Push the veggies to one side of the pan. Pour the beaten egg into the empty space and scramble it until fully cooked.
- Add the cooked rice to the pan. Use a spatula to break up any clumps.
- Stir in soy sauce, oyster sauce, fish sauce, sugar, and white pepper. Mix well.
- Return the cooked shrimp to the pan.
- Toss in the Thai basil leaves and green onions. Stir-fry for another minute until the basil is wilted and fragrant.
- Remove from heat and serve hot with lime wedges on the side.
