  1. Cook and chill the rice in advance (preferably overnight).
  2. Peel and devein the shrimp. Chop garlic, chilies, onion, and bell pepper.
  3. Heat 1 tablespoon of oil in a wok or large pan over medium-high heat.
  4. Add shrimp and cook for about 2 minutes per side until pink and opaque. Remove and set aside.
  5. In the same pan, add another tablespoon of oil.
  6. Stir-fry garlic and chilies for about 30 seconds until fragrant.
  7. Add onions and bell pepper, cooking until slightly softened.
  8. Push the veggies to one side of the pan. Pour the beaten egg into the empty space and scramble it until fully cooked.
  9. Add the cooked rice to the pan. Use a spatula to break up any clumps.
  10. Stir in soy sauce, oyster sauce, fish sauce, sugar, and white pepper. Mix well.
  11. Return the cooked shrimp to the pan.
  12. Toss in the Thai basil leaves and green onions. Stir-fry for another minute until the basil is wilted and fragrant.
  13. Remove from heat and serve hot with lime wedges on the side.
