  1. Pat the chicken pieces dry with paper towels. Season generously with salt and pepper.
  2. Rub the chicken with 1 tablespoon of Dijon mustard to infuse it with flavor.
  3. Heat olive oil and butter in a large skillet or Dutch oven over medium-high heat.
  4. Add the chicken, skin-side down, and sear for about 5 minutes until golden brown. Flip and cook for another 3 minutes. Remove and set aside.
  5. In the same pan, add the chopped onion and cook for 2-3 minutes until softened.
  6. Add the garlic and cook for 30 seconds until fragrant.
  7. Pour in the white wine and scrape up any browned bits from the pan. Let it simmer for about 2 minutes until slightly reduced.
  8. Stir in the remaining Dijon mustard, whole grain mustard (if using), chicken broth, thyme, and rosemary.
  9. Return the chicken to the pan, skin-side up. Cover and simmer on low heat for about 25 minutes, until the chicken is fully cooked and tender.
  10. Remove the chicken and set it aside on a plate.
  11. Stir the heavy cream into the sauce and let it simmer for 3-5 minutes until slightly thickened.
  12. Add lemon juice for a touch of brightness (optional). Adjust seasoning with salt and pepper if needed.
  13. Return the chicken to the sauce and spoon some sauce over the top.
  14. Garnish with fresh parsley and serve with mashed potatoes, rice, or crusty French bread.
