Braaibroodjies (literally “barbecue sandwiches”) are a South African twist on the classic grilled cheese, often cooked over an open flame during a braai (barbecue). These smoky, cheesy sandwiches are layered with sweet, savory, and slightly tangy ingredients for an unforgettable flavor.

  1. Spread butter evenly on one side of each slice of bread. The buttered side will face outward when grilling to create a golden, crispy crust.
  2. On the unbuttered side of four bread slices, spread a thin layer of chutney.
  3. Top with a generous layer of grated cheddar and gouda cheese.
  4. Add a slice of tomato and, if desired, a few slices of red onion.
  5. Season lightly with salt and pepper.
  6. Place a few fresh basil leaves on top for added aroma (optional).
  7. Close each sandwich with another slice of bread, buttered side out.
  8. Preheat your grill to medium heat or prepare a barbecue with moderate coals. If cooking indoors, use a grill pan or a standard frying pan over medium heat.
  9. Place the sandwiches on the grill, buttered side down. Cook for about 3–5 minutes per side, pressing gently with a spatula to ensure even toasting.
  10. Flip carefully and grill the other side until golden brown and the cheese is melted.
  11. Remove the sandwiches from the grill and let them cool slightly before cutting in half or quarters.
  12. Serve warm, ideally alongside a crisp salad or chips for a complete meal.
