  2. Add the thinly sliced steak to the marinade and toss to coat evenly.
  3. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add the sliced onions and cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.
  6. Stir in the tomato paste or grated tomato, Worcestershire sauce (if using), smoked paprika, and bay leaf. Cook for 2-3 minutes until fragrant.
  7. Add the stock and stir to combine. Bring the sauce to a gentle simmer and season with salt and pepper to taste. Reduce heat to low.
  8. Heat another large skillet or grill pan over medium-high heat.
  9. Cook the marinated steak for 2-3 minutes per side, depending on thickness, until browned and cooked to your liking. Avoid overcrowding the pan; cook in batches if necessary.
  10. Transfer the cooked steak to the skillet with the onion sauce.
  11. Let the steak simmer in the onion sauce for 5-7 minutes to absorb the flavors.
  12. Garnish with fresh parsley or cilantro before serving.
