Instructions

Shrimp Stock
  1. Heat a tall pot over medium heat and add the olive oil.
  2. Add the shrimp heads and shells, searing them for a couple of minutes until golden.
  3. Add the onion and cook for about 2 minutes until it starts to soften.
  4. Add the remaining stock ingredients and cover with room temperature water.
  5. Simmer for about 1 hour, then strain the stock and reserve it.
Shrimp and Rice
  1. Heat a wide pot over medium heat and add the olive oil.
  2. Add the diced onion and cook until translucent.
  3. Add the minced garlic and cook for another minute.
  4. Add the diced tomatoes and cook for another 3 minutes or until the tomatoes start to soften.
  5. Add the bay leaf, tomato concentrate, piri-piri powder, and rice. Cook for another minute.
  6. Deglaze with the white wine and let the alcohol evaporate.
  7. Add 1 liter of hot shrimp stock. Season with black pepper and salt if needed.
  8. Cover and cook the rice undisturbed for about 20 minutes.
  9. Add the shrimp to the rice, stirring gently. If desired, cut the shrimp into smaller pieces.
  10. Ensure there is enough broth; add more water or broth if necessary.
  11. Cover and cook for another 5 minutes or until the rice is cooked but slightly chewy in the middle.
  12. Serve with freshly chopped cilantro.
