  1. Sear the Sausage & Chicken: Heat olive oil in a large pot or Dutch oven over medium heat. Add the sausage slices and cook until browned (about 3 minutes). Remove and set aside. Add chicken pieces to the pot and cook until browned (5-7 minutes). Remove and set aside with the sausage.
  2. Sauté the Vegetables: In the same pot, add the onion, bell pepper, and celery. Sauté until softened (about 5 minutes). Stir in garlic and cook for another 30 seconds until fragrant.
  3. Toast the Rice & Add Liquids: Add the rice to the pot and stir for 1-2 minutes. Pour in diced tomatoes (with juice), chicken broth, Worcestershire sauce, and all seasonings (salt, pepper, paprika, cayenne, oregano, thyme, smoked paprika). Add the bay leaves.
  4. Simmer the Jambalaya: Return the sausage and chicken to the pot. Bring everything to a boil, then reduce heat to low, cover, and let simmer for 20-25 minutes, stirring occasionally.
  5. Add Shrimp: Nestle the shrimp into the pot and cook for another 5-7 minutes, or until the shrimp turn pink and opaque.
  6. Garnish & Serve: Remove bay leaves. Garnish with sliced green onions and fresh parsley. Serve hot!
