  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and sliced onion to the pan and stir-fry for about 1 minute until fragrant.
  3. Add shrimp to the pan and cook until browned and cooked through.
  4. Push the shrimp to one side of the pan and add the julienned carrot, sliced bell pepper, and sliced cabbage. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
  5. Add the soy sauce, oyster sauce, fish sauce (if using), and sugar to the pan. Stir well to combine and coat all the ingredients.
  6. Add the ramen noodles to the pan and toss everything together until the noodles are heated through and well coated with the sauce. If the noodles seem too dry, you can add a splash of water or chicken broth to loosen them up.
  7. Season with salt and pepper to taste.
  8. Remove the pan from the heat and garnish with chopped green onions and cilantro.
  9. Serve hot with lime wedges on the side for squeezing over the noodles.
