- In a large pot, add beef, water, bay leaf, whole onion, and garlic.
- Bring to a boil, skim off any foam, and reduce heat to low.
- Simmer for about 1 hour until the meat is tender. Remove the onion and discard it. Take the meat out, chop it into small pieces, and return it to the pot.
- In a skillet, heat 1 tbsp of oil and sauté grated beets for 5 minutes.
- Add vinegar, sugar, and a splash of water. Cover and let simmer for 10 minutes to preserve the vibrant color.
- In another pan, heat the remaining 1 tbsp of oil. Sauté the chopped onion and grated carrot until soft (5 minutes).
- Add tomato paste and fresh tomato, cook for another 3 minutes.
- Add diced potatoes to the broth and cook for 10 minutes.
- Stir in shredded cabbage, cooked beets, and sautéed carrot-onion mixture.
- Season with salt, black pepper, and paprika (if using). Simmer for 15 more minutes.
- Turn off the heat and let the borscht rest for 15-20 minutes to allow the flavors to blend.
- Serve hot, garnished with fresh dill and a dollop of sour cream. Enjoy with rye bread or pampushky!
