Instructions

  1. Season chicken breasts with salt and black pepper.
  2. Heat the vegetable oil in a large skillet or Dutch oven over medium heat.
  3. Sear the chicken breasts for 2–3 minutes on each side until lightly browned.
  4. Add the chicken broth or water to the pan. Cover and simmer for 20 minutes, or until the chicken is fully cooked. Remove the chicken from the broth, shred or slice as desired, and set aside. Reserve the broth for the sauce.
  5. In a pot of boiling water, cook the tomatillos, onion, garlic, jalapeños, and green bell pepper for 8–10 minutes, or until soft. Drain and set aside.
  6. In a blender, combine the cooked vegetables, cilantro, parsley, green onions, and torn tortillas or masa. Add 1 cup of the reserved chicken broth and blend until smooth.
  7. Season the mixture with cumin, salt, and pepper to taste.
  8. Pour the green sauce into the skillet or Dutch oven used for the chicken. Add 1–2 cups of reserved chicken broth to reach your desired consistency.
  9. Bring the sauce to a simmer over medium heat and cook for 5 minutes, stirring occasionally.
  10. Add the cooked chicken back to the sauce and simmer for another 10 minutes, allowing the flavors to meld.
