  1. Slice the chicken and vegetables. Set aside.
  2. In a large skillet or saucepan over medium heat, add half of the coconut milk.
  3. Bring it to a simmer, then add the green curry paste. Stir and cook for 2-3 minutes, allowing the flavors to meld and the aroma to develop.
  4. Add the sliced chicken to the pan and cook until it’s no longer pink.
  5. Pour in the remaining coconut milk and bring to a simmer.
  6. Add the zucchini, eggplant, green beans, and bell pepper (if using).
  7. Stir everything together, then add chicken broth or water to reach your desired consistency.
  8. Add fish sauce, sugar, and kaffir lime leaves (if using).
  9. Simmer the curry for about 10 minutes until the vegetables are tender but still vibrant.
  10. Taste the curry and adjust seasoning as needed. Add more fish sauce for saltiness or sugar for sweetness.
  11. Ladle the curry into bowls over jasmine rice or sticky rice.
  12. Garnish with fresh Thai basil leaves for an aromatic finish.
