- Add the spaghetti and cook according to the package instructions until al dente.
- Drain the pasta and set aside, reserving about 1/2 cup of the pasta water for later.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the garlic and green bell pepper, and cook for another 2-3 minutes until fragrant.
- Stir in the ground beef or lamb, breaking it up with a spoon. Cook until browned and no longer pink, about 7-10 minutes.
- Add the chopped tomatoes, tomato paste, cumin, coriander, turmeric, paprika, cinnamon, black pepper, and salt. Stir well to combine.
- Pour in the water or beef broth, reduce the heat to low, and let the sauce simmer for 20-25 minutes. Stir occasionally and adjust the seasoning if needed.
- Toss the cooked spaghetti with the Suugo Suqaar sauce in the skillet. If the mixture is too thick, add a splash of the reserved pasta water to loosen it up.
- Allow the pasta to absorb the flavors for a couple of minutes over low heat.
- Serve the Somali pasta hot, garnished with fresh cilantro
