Cook Pasta
  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.
Prepare Sauce
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the diced tomatoes to the skillet and season with salt and pepper.
  4. Cook the tomatoes for about 5-7 minutes, stirring occasionally, until they start to break down and release their juices.
  5. Use a wooden spoon or fork to gently mash some of the tomatoes to create a chunky sauce consistency.
  6. If the sauce looks too dry, you can add some of the reserved pasta water to reach your desired consistency.
Combine Pasta & Sauce
  1. Once the pasta is cooked, drain it and add it directly to the skillet with the tomato sauce.
  2. Toss the pasta with the sauce until it's evenly coated.
  3. Add the chopped basil leaves and toss again to incorporate.
Serve
  1. Divide the Pasta Pomodoro among serving plates or bowls.
  2. Optionally, sprinkle with grated Parmesan cheese on top.
  3. Serve hot and enjoy!
