  1. Heat a large skillet or wok over medium heat. Add a little vegetable oil and scramble the egg until just set. Remove from the pan and set aside.
  2. In the same skillet or wok, add the remaining vegetable oil. Add the minced garlic and cook until fragrant, about 30 seconds.
  3. Add the diced vegetables to the skillet and cook until they start to soften, about 3-4 minutes.
  4. Add the chopped kimchi and kimchi juice to the skillet. Stir-fry for 2-3 minutes until the kimchi is heated through.
  5. Add the cooked rice to the skillet. Stir to combine with the vegetables and kimchi. Break up any clumps of rice with a spatula.
  6. Add the soy sauce and sesame oil. If using, add gochujang for extra spice. Stir everything together until well combined and heated through.
  7. If you scrambled an egg earlier, add it back to the skillet and mix it into the rice.
  8. Sprinkle chopped green onions, toasted sesame seeds, and nori strips over the top.
  9. Serve hot, and enjoy your homemade Kimchi Fried Rice!
