  1. In a bowl, combine soy sauce, mirin, sake, sugar, garlic, and ginger. Stir until the sugar is dissolved.
  2. Add the chicken pieces to the marinade and mix well to coat.
  3. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for better flavor.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken pieces onto the soaked bamboo skewers.
  6. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the chicken is cooked through and slightly charred.
  7. Baste with any remaining marinade during grilling for extra flavor.
  8. Transfer the skewers to a serving platter.
  9. Garnish with sliced green onions or scallions if desired.
