- Pour 1 Tbsp of olive oil into pot on medium heat
- Diced your onions, carrots, & celery
- Sauté your onions, celery, and carrots for 5 minutes then add garlic and simmer for 1 minute
- Add 2 cans of white beans & add 2 tbsp of tomato paste
- Add your spices 1 tsp of paprika, salt, pepper, and 1/2 tsp of red pepper flakes
- Toast your ingredients for 1 minute
- Add water to cover and 2 bay leaves bring to a boil
- Then simmer for 20-30 minutes with lid slightly cracked
- Serve and top with parsley & feta cheese
