Ingredients

Instructions

  1. Pour 1 Tbsp of olive oil into pot on medium heat
  2. Diced your onions, carrots, & celery
  3. Sauté your onions, celery, and carrots for 5 minutes then add garlic and simmer for 1 minute
  4. Add 2 cans of white beans & add 2 tbsp of tomato paste
  5. Add your spices 1 tsp of paprika, salt, pepper, and 1/2 tsp of red pepper flakes
  6. Toast your ingredients for 1 minute
  7. Add water to cover and 2 bay leaves bring to a boil
  8. Then simmer for 20-30 minutes with lid slightly cracked
  9. Serve and top with parsley & feta cheese
