Dublin Coddle is a comforting Irish dish, perfect for chilly evenings or when you want to enjoy something hearty and flavorful. It’s made with simple ingredients that combine beautifully during a slow cook. Here's how to prepare this traditional dish:

  1. In a large skillet or heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
  2. In the same skillet, brown the sausages until they develop a nice golden color on the outside. They don’t need to be fully cooked at this stage. Remove and set aside with the bacon.
  3. In a large ovenproof pot or Dutch oven, layer half of the sliced potatoes on the bottom.
  4. Add half the onions, garlic, and carrots (if using) on top.
  5. Sprinkle some salt and pepper over the layer.
  6. Add the bacon and sausages on top, followed by the remaining potatoes, onions, and carrots.
  7. Pour the chicken stock and beer (if using) over the layered ingredients. Ensure the liquid covers most of the contents but doesn’t completely submerge them.
  8. Bring the pot to a gentle simmer on the stovetop.
  9. Cover with a lid and transfer to a preheated oven at 350°F (175°C).
  10. Cook for about 1.5 to 2 hours, or until the potatoes are tender and the flavors meld together beautifully.
  11. Garnish with freshly chopped parsley before serving.
  12. Serve hot with crusty bread or Irish soda bread to soak up the delicious broth.
