For the Spicy Sauce:
  1. In a large bowl, mix soy sauce, mirin, minced garlic, minced ginger, and vegetable oil.
  2. Add the chicken pieces, mix well to coat, and let it marinate for 20-30 minutes.
  3. In a small bowl, combine gochugaru, gochujang, soy sauce, honey, rice syrup, sesame oil, minced garlic, minced ginger, paprika (if using), and water.
  4. Mix until the sauce is smooth and well-blended.
  5. Heat a non-stick skillet or cast-iron pan over medium heat. Add a bit of oil if necessary.
  6. Add the marinated chicken and cook for 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through.
  7. Reduce the heat to medium-low. Pour the spicy sauce over the cooked chicken.
  8. Stir well to coat the chicken in the sauce. Let it simmer for 2-3 minutes until the sauce thickens slightly.
  9. Sprinkle shredded mozzarella cheese generously over the top of the chicken.
  10. Cover the pan with a lid and let it cook for 2-3 minutes on low heat, or until the cheese is fully melted and bubbly.
  11. Remove the pan from heat and garnish with sliced green onion and sesame seeds.
  12. Serve hot with steamed rice, lettuce wraps, or on its own as a spicy appetizer.
