  1. Heat 1 tablespoon of oil in a large pot or Dutch oven over medium heat.
  2. Add the beef cubes and brown them on all sides. Remove the beef and set aside.
  3. In the same pot, heat the remaining 1 tablespoon of oil.
  4. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  5. Stir in the garlic and ginger, cooking for an additional minute until fragrant.
  6. Add cumin, coriander, turmeric, paprika, black pepper, cardamom, and the cinnamon stick.
  7. Stir the spices into the onion mixture, allowing them to toast for 1 minute.
  8. Return the beef to the pot and stir to coat with the spice mixture.
  9. Add the tomatoes, carrots, potatoes, and green bell pepper. Mix well.
  10. Pour in the beef broth or water, ensuring the ingredients are covered.
  11. Bring to a boil, then reduce the heat to low and simmer for 45 minutes to 1 hour, or until the beef is tender and the vegetables are cooked through.
  12. Taste and add salt as needed.
  13. If the stew is too thick, add a splash of water or broth to reach the desired consistency.
  14. Garnish with fresh cilantro and serve hot with rice, flatbread, or chapati.
  15. Squeeze fresh lime juice on top for a burst of brightness.
