  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and diced bell pepper. Sauté until the vegetables are softened, about 5 minutes.
  2. Add minced garlic to the skillet and cook for another minute until fragrant.
  3. Pour in the diced tomatoes along with their juices. Stir in dried oregano, dried basil, salt, and pepper. Let the sauce simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  4. Add the shrimp to the skillet and stir to coat them with the tomato sauce. Cook for 5-7 minutes, or until the shrimp are pink and cooked through.
  5. Sprinkle crumbled feta cheese over the top of the shrimp and sauce. Let it melt slightly into the sauce.
  6. Remove the skillet from the heat. Garnish with chopped fresh parsley.
