Ingredients

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 1 minute.
  3. Stir in the chopped anchovies, if using, until they dissolve in the oil.
  4. Add the red chili flakes, capers, and olives to the skillet. Stir and cook for 2 minutes, allowing the flavors to meld.
  5. Add the canned tomatoes and tomato paste to the skillet. Stir well and let the sauce simmer gently for 10–15 minutes. Stir occasionally to prevent sticking.
  6. Add the cooked pasta to the skillet and toss to coat evenly. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is achieved.
  7. Taste the dish and adjust the seasoning with salt and black pepper. Remember, the anchovies, olives, and capers are salty, so season carefully.
  8. Garnish with chopped parsley and, if desired, grated Parmigiano-Reggiano.
