- Dust the beef with flour, tossing to coat evenly. This helps with browning and thickening the stew later.

- Brown the beef cubes in batches to avoid overcrowding the pot. Sear them until golden brown on all sides (about 3-4 minutes per batch). Set the browned beef aside.
- In the same pot, add the remaining 2 tbsp butter and lower the heat to medium.
- Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown (about 15-20 minutes). The onions should caramelize but not burn.
- Stir in the garlic and cook for another minute.
- Pour in the red wine vinegar and use a wooden spoon to scrape up any browned bits stuck to the bottom of the pot.
- Return the browned beef to the pot. Add the beer, beef stock, brown sugar, Dijon mustard, thyme, and bay leaves. Stir to combine.
- Bring the stew to a gentle simmer.
- Cover the pot and let the stew simmer on low heat for 2-2.5 hours, stirring occasionally. Alternatively, you can place the pot in a 325°F (160°C) preheated oven for the same amount of time.
- The beef should be tender, and the sauce thick and rich.
- Taste the stew and adjust the seasoning with salt and pepper. Remove the thyme sprigs and bay leaves.
- Serve the Carbonnade hot with crusty bread, mashed potatoes, or over egg noodles. Garnish with fresh parsley if desired.
